The recipe for pesto purple potatoes is super easy to make and uses ready to use traditional basil pesto and few other ingredients. This is an excellent side dish or you can serve as an appetizer too. And I can tell you, you cannot eat just one these pesto purple potatoes are delicious!
Purple potatoes are very common in South America particularly you can see them an an ingredient in the Peruvian cuisine. Where purple potatoes are used in many different applications, like traditional causa and served in salads or just roasted with spices.
Pesto Purple Potatoes
Ingredients
- 1 pound of purple potatoes
- 1 teaspoon of salt
- 1 teaspoon of coarse black pepper
- 1 tablespoon of olive oil
- 1 tablespoon of basil pesto sauce
- 1 bunch of fresh curly parsley
Instructions
- Clean the potatoes and remove any dirt, do not peel.
- Place in a roasting pan and season with salt and pepper. Add the olive oil and roast for 20 minutes.
- Cut the potatoes in halves and add the basil pesto sauce.
- Garnish with fresh curly parsley and serve on a nice bowl.
- Enjoy immediately.

Taking the flavors of the roasted potatoes as the inspiration I prepared this pesto purple potatoes dish using my grandmothers recipe for oven roasted potatoes and finishing with a ready to use basil pesto from the store as well as fresh parsley from my garden.
This recipe is outstanding, the flavors are so good and go perfect with grilled meats, chicken or fish. You can also serve them as an appetizer paired with a glass of white wine.
Purple potatoes can be easily found and are available in most markets year round. The nutritional value that purple potatoes have is something to consider as they are high in potassium and have antioxidants which are good for a heart healthy diet. They also have more protein and less carbs than a russet potato, however they are still potatoes so as with any other food, have to be consumed with moderation and combined with a well balanced diet to avoid having too much starch in one meal.
When cooking purple potatoes leave the skin on to get the most of the nutrients. Just clean well to remove any impurities or dirt as they grow in the ground. Purple potatoes are starchy and have a nutty flavor, they are a versatile ingredient and go well with many combinations.
