Ingredients for preparing the Spicy Pickled Pineapple on Sous Vide

INGREDIENTS

  • 1 cup of Brazilian peppers (pimenta malagueta, cayenne, cumari de pere, arbol, fildalga, biquinho)
  • 2Ā cups of fresh pineapple cut in squares
  • 1 large purple onion cut in rounds or juliennes
  • 1 teaspoon of pickling spice
  • 1 teaspoon of red pepper
  • 1 1/2 teaspoonĀ of ground pink salt (you can use pickling salt if desired)
  • 1/3 cup of apple cider vinegar

Preparation time: 30 minutes. You will need a chopping block, a knife and a Sous Vide. Canning jars if desired. Serves 4 cups.

Fill the SousVide Supreme Ā with water and set the temperature to 140 grades Fahrenheit. Chop the ingredients of the list as directed and add them to the appropriate plastic bag to cook using sous vide technique, this is a standard plastic pouch. Following add the pickling spices, the salt and the vinegar. Cook for 30 minutes.
