My family’s favorite dish is without a doubt pasta alfredo. I treat them from time to time with their favorite dish but sometimes I incorporate different flavors to introduce my family to my latino ingredients and chiles poblanos are a great addition since have a mild flavor not spicy and most everyone loves the smoky taste of the poblanos when roasted. That is why today I want to share with you my recipe for Roasted Poblano Spaghetti Alfredo using Barilla spaghetti pasta and commercial alfredo sauce to make a dinner in less than 30 minutes.
INGREDIENTS
- 3 roasted chiles poblanos, cleaned, deveined and chopped
- 1 garlic clove
- 3 cups of commercial alfredo sauce or 15 ounces
- 2 cups of crumbled queso fresco
- 1/2 pound of Barilla thick spaghetti pasta (half of one pound package)
- 4 cups of boiling water
- 1 teaspoon of salt
Preparation time: 30 minutes. Serves 4 portions. Cost per portion less than $3.00 per serving. You will need a roasting pan, a pasta pot, mixing bowl and measuring cups.
To prepare the Roasted Poblano Spaghetti Alfredo start by blistering or roasting the poblanos peppers for easy peeling. Chiles poblanos need to be peeled cannot be used raw. Blistering the chiles is very easy, just place the chiles on the comalito or roasting pan and roast on each side when ready place inside a plastic bag, close it and let them sweat. Take them out and peel, remove the seeds and the veins as well as the stem and cut. To prepare the roasted poblano alfredo sauce use the blender. Pour the sauce in the blender, add the roasted poblanos and the garlic, blend until getting a smooth light green sauce. Cook the pasta in boiling salted water for 12 minutes or until al dente. Place the hot cooked pasta on a mixing bowl and add the sauce, mix well. Serve the roasted poblano spaghetti alfredo on a pasta bowl and sprinkle with crumbled queso fresco. You can add a yellow tomato to decorate as well as chopped poblano to add additional texture.
This recipe for Roasted Poblano Spaghetti Alfredo is very easy and you can prepare for lunch or dinner in no time. With busy fall schedules finding time to connect as a family and cook traditional Hispanic dishes can seem almost impossible.
