Out with the old in with the new so we are starting the year with a fresh salad that it is nutritious and embraces the seasonal veggies and fruits like spinach and kiwi which can be found at the local supermarket at an affordable price during this month. We don’t need to break the bank to eat healthy especially after all the spending during the holidays. That is why today I want to share with you a fresh alternative using fresh kiwi, spinach and a surprising ingredient “finger limes” or also known as citrus caviar which adds texture and fresh burst of lemon-lime flavor. The inspiration behind this salad are two of my new year’s resolutions travel to new places and lose some pounds so decided to include Kiwi fruit from New Zealand and finger limes from Australia. I invite you to cook with me by preparing this Kiwi Spinach Salad topped with finger limes, feta cheese and dressed with a healthy olive oil and white balsamic dressing, so let’s cook!
INGREDIENTS
- 4 cups of fresh spinach leaves (preferably organic you can use those bagged ready to eat)
- 4 kiwis
- 1/2 cup of chopped walnuts
- 1 cup of crumbled feta cheese
- 4 finger limes
- 1/2 cup of white balsamic vinegar
- 1 cup of olive oil
- 1 teaspoon of salt
- 1 teaspoon of pepper
Preparation time: 15 minutes. Serves 4 guests. Approximate cost per person is less than $2.00 depending on the cost of the ingredients at your local supermarket. You will need a small bowl, 4 salad plates, a chopping block, a knife and a spoon.
Serve one cup of spinach per salad plate, then peel and cut one kiwi per serving and place on top of the spinach bed. Add 1 or 2 teaspoons of roughly chopped walnuts, add 1/4 of a cup of feta cheese per plate and top with finger limes. To take out the citrus pearls from the finger lime cut in the middle and then squeeze on top of the salad. You will need one finger lime per serving. To prepare the dressing add all the ingredients to a bowl and combine well. Drizzle some of the dressing on top of the Kiwi Spinach Salad and enjoy for lunch or for a light dinner. You can pair this Kiwi Spinach Salad with a serving of grilled fish or chicken to add an additional serving of protein.
