An Ugly Carrot and Turmeric Soup is what it is in our menu for the 7 Weeks of Lent Recipes. But you might be wondering why is this soup using ugly carrots. This dish isn’t ugly at all we are using what has been qualified as an ugly carrot by vegetable cosmetic standards here in the US.
These carrots are perfectly fresh and good for human consumption but they do not look perfect so they are qualified as ugly produce that many times is thrown away despite being fresh. Worldwide it is known food waste is a big problem. Just here in the US about twenty six percent of the produce is wasted.

Living in markets where there is bounty of resources and surplus of food in the marketplace, does not mean there will be enough food to feed our families and future generations.
As it is right now, there are people here in the US that suffer from hunger due to poverty. Then add to this issue the food that is wasted everyday that can be donated for local food banks to feed people in need.
But did you know that also food waste contributes to other issues such as the waste of natural resources like water. We could use less water and be more efficient if we actually produce and eat all the fruits and vegetables that are grown.
Statistics say that forty percent of the food grown is wasted. In average a family in America wastes $2000 dollars per year in food that they never eat. Watch this video from a TEDTalks talk to better understand this issue that we can help to solve.
That is why I am taking a stand at home and to avoid food waste by buying less, changing my point of view on how a fruit or a vegetable should look and educating my family that ugly fruits and vegetables are indeed beautiful. That is why when I saw these carrots in the supermarket I could not resist to buy them and prepare this delicious Ugly Carrot and Turmeric Soup. A vegetarian option that is perfect for lent and a plate of soup that will nourish our soul knowing we are helping the future by avoiding these carrots go to waste because they aren’t pretty.
In my Mexican cuisine it is known there is seldom waste. With leftovers we prepare tacos, enchiladas or sopes. I remember growing up my mom was used to transform leftovers into delicious dishes like soups, empanadas, croquettes and casseroles.
I invite you reflect on this issue, specially now that we are celebrating lent. Prepare my recipe for Ugly Carrot and Turmeric Soup it is tasty and hassle free. Take the opportunity to educate the children on the importance of doing good and prevent food waste.
