These carrots are perfectly fresh and good for human consumption but they do not look perfect so they are qualified as ugly produce that many times is thrown away despite being fresh. Worldwide it is known food waste is a big problem. Just here in the US about twenty six percent of the produce is wasted.

The Ugly Carrot and Turmeric Soup, a vegetarian option that is perfect for lent and a plate of soup that will nourish our soul knowing we are helping the future by avoiding these carrots go to waste because they aren't pretty.

Ingredients
  

  • 7 ugly carrots peeled and washed
  • 6 cups of boiling water
  • 1 fresh turmeric peeled washed and chopped
  • 2 tablespoons of unsalted butter
  • Salt and pepper to taste
  • 1 teaspoon of chipotle sauce
  • 1 teaspoon of crema mexicana

Instructions
 

  • Add the water to a soup pan and let it boil, then add the peeled and clean carrots and cook for about 15 to 20 minutes until tender.
  • Add the cooked carrots to the blender along the turmeric and the butter.
  • Pour 4 cups of the water you used to cook the carrots and blend until getting a smooth consistency.
  • Pour this preparation to a soup pan and season with salt and pepper. Cook for other 10 minutes.
  • Serve hot and garnish with chipotle sauce and crema mexicana.

That is why I am taking a stand at home and to avoid food waste by buying less, changing my point of view on how a fruit or a vegetable should look and educating my family that ugly fruits and vegetables are indeed beautiful. That is why when I saw these carrots in the supermarket I could not resist to buy them and prepare this delicious Ugly Carrot and Turmeric Soup. A vegetarian option that is perfect for lent and a plate of soup that will nourish our soul knowing we are helping the future by avoiding these carrots go to waste because they aren’t pretty.

In my Mexican cuisine it is known there is seldom waste. With leftovers we prepare tacos, enchiladas or sopes. I remember growing up my mom was used to transform leftovers into delicious dishes like soups, empanadascroquettes and casseroles.
